New Eats and Play Pics

This weekend flew by! Where does the time go? It's almost May.

I went grocery shopping yesterday, quickly. No planned meals, just picking up essentials. I decided to try something different. I was inspired by Marisa at Loser for Life the other day when she made a smoothie using cottage cheese and pineapple. I'm not a fan of cottage cheese but it's one of those foods that I want to like! I don't eat things I don't like, but I will try them occasionally made different ways to see if I might like it.

I didn't make a smoothie like Marisa but I did mix together crushed pineapple, low fat cottage cheese, little bit of vanilla extract (straight from Mexico - the good stuff!), and splenda. It wasn't too bad. I'm a little weirded out by the texture of cottage cheese. I think that's what throws me off. But it was doable. I'm going to try this a little this week and see how it goes.

Anyone have a good way to use cottage cheese for those that aren't huge fans?

On another note, my 15 year old cousin/goddaughter had a play on Saturday. It was her first high school performance. The play was young Frankenstein. She did good. She had a lead female role so she was in a lot of scenes. Here are a few pictures of her in the play. Good job Anna!




I'm still working on getting back on the right eating path. I'll let you know tomorrow how it's going!

As for cottage cheese, try this: blend it up using an immersion blender, or probably even a blender, add a bit of sweetener, 1/2 a banana and then when it's smooth pour it into a bowl and put it in the fridge overnight. IT comes out like CHEESECAKE! no lie! try it :)

  3. I feel the same way about cottage cheese! The texture is strange, that's why I like it best in a smoothie.

    I do have a recipe for Smoked Salmon and Parmesan Omelet Muffins (from Kath Eats) that uses cottage cheese. Can't detect it at all! Let me know if you can't find it on my site. I was going to experiment this week with Ham and Cheese Omelet Muffins, too, so stay tuned for that one!
